Welcome to the forum Bobby. Glad you are here.
In my opinion two tarps for a 40 ft trailer are better since you may not always have a full trailer load that is tarped.
You have to allow for an estimated height for the load and length of load to come up with a tarp size. My estimate is for a 6 ft high load and if you have a 20 ft long load the tarp has to cover 6 ft on each end and side so the tarp would have to be 32 X 32 for example.
If you want custom tarps and can afford them I would recommend that. I think there is a link in one of the forums here that tells you who does tarps and you can get an estimate of price.
As far as sides kits. I have never seen one but check with the trailer manufacturers and see what they offer. You may have to have one built.
Some one had some tarps for sale on this forum a while back.

...& I still have a set for sale on here.
If you are looking for new, call Scott at Peak's lightweight tarps.

This link has loads and used to have a lot of horses to haul. That is an area that needs a lot of info to do and I never checked into it. You have be good with horses because they have to be fed and water, excecised, etc. Paperwork for crossing state lines is needed for the horses and hay.
The indication is that it pays good. Do your homework. There are other loads as well. Check all the regular load boards that you used when you were hauling with a big truck. Just check for load size to be sure it fits.
Do a search for load boards on the internet and look on here. I believe there is a thread with them listed.

But the best thing you can do is look for direct customer's close to home. If you try to just live off the load boards, it is going to be tough.
I would check with the Amish community, your livestock/flatbed operation might be something they might have a need for.
